an industry professional? Oregon Culinary Institute features a
full range of cooking classes for enthusiasts of all levels. As
with our professional school, the emphasis is "hands-on."
Hands-On Training in Our Kitchens
The critical difference between Oregon Culinary Institute and
other cooking schools is the extent to which our students are
working in the kitchen. When you come to one of our classes, you'll
be busy slicing, dicing, stirring and tasting. The meal you sit
down to at the end of the class will be all the more satisfying,
knowing that you've prepared it yourself. Experience is the best
teacher, and we'll make sure you get lots of it.
Another difference between our program and others is the extent
to which we concentrate on technique. By technique we mean classic,
proven, methods that form the foundation of all good cooking,
regardless of ingredients or ethnic origin.
We'll help you understand how and why professional chefs do what
they do, so that you can take this knowledge home and use it creatively.
Anyone can read a recipe. We want you to understand how cooking
works.
We offer a wide variety of classes in many formats. And we have
a team of experienced chef instructors who are passionate about
what they do. Besides being professionally trained chefs, they're
trained educators. They're the same instructors who teach in our
professional program, and they can help you learn proper techniques
-- from basic to the most adanced!
