Frequently Asked
Questions
Are your classes Hands-On or Demonstration?
All classes, unless otherwise indicated, are "Hands-On." By hands-on,
we mean that our consumer education students will be slicing,
dicing, stirring, and tasting. Our facilities allow for every
student to have their own station in a professional kitchen, thereby
maximizing the training you will receive actually cooking, as
opposed to watching someone else cook.
How do I sign-up for a class?
Clicking on any class name on the overview
page, course-by-date page,
or the calendar itself will take you
to a page dedicated to information about that class. From this
page, you will be able to choose which class date you would like
to sign up for, and then you can begin the online sign up process.
You may also call OCI at 503-961-6200 to enroll
in classes, or ask for directions to enroll in person.
When is payment due?
For classes and series, full payment is due at the time of registration.
Classes fill up quickly, and this is the only way you can be guaranteed
a spot. For team building classes, a 20% deposit of the total
cost is due at the time of registration.
What is your cancellation and refund
policy?
If OCI is closed when your class is scheduled to take place (due
to inclement weather, because the minimum number of students was
not met, or otherwise) you will receive a full refund. If you
are not able to attend a series, class, or team-building you are
registered for, please call 503-961-6200 as soon as possible.
For information on refunds, please read below.
- 10-Day or 4-Day Series
A minimum of seven (7) day advance notice is required for full
refunds on any of the series offerings. If you cancel for a
series less than 7 days before the first class in the series,
you will be charged 20% of the series cost. If you cancel after
the second class, you will receive a refund for 50% of the cost
of the remaining classes. If you miss any classes, you will
receive a pro-rated refund (50%) for the class(es) missed.
Note: If you, or OCI, are able to fill your vacancy, then you
will receive a full refund.
- Single classes and Demonstration classes
A minimum of 72 hour advance notice is required to receive a
full refund if cancelling a single class. If you cancel within
72 hours, you will be charged 50% of the class cost.
Note: If you, or OCI, are able to fill your vacancy, then you
will receive a full refund.
What methods of payment do you accept?
We accept Visa and MasterCard as well as checks and cash.
Will I receive a confirmation when
I register for a class?
Yes. You will receive a confirmation email. One week before class,
we will contact you to remind you of your class reservation.
Can I take a single class within
a series?
The series offerings can only be taken in their entirety; the
classes within them are not offered a la carte. The 10-week Baking
and Pastry series does include an 11th 'Flex Date' in case you
miss a class.
What equipment do I need to bring
to class?
If you own a knife, or knives, that you are comfortable with and
plan on continuing to use in your home kitchen, we encourage you
to bring them for your class. Otherwise, you will have the option
of either purchasing a set of professional knives at a very fair
price or using the professional knives that we will provide.
Can I get on a waiting list for a
full class?
Absolutely. If the class is full you will be given the option
to either sign up for the next available class or get on the waiting
list.
Must I complete certain classes to
take others?
No. If you are relatively new to the kitchen, you will be happy
to know that every class will start with sanitation and basic
knife safety. However, we recommend that all aspiring cooks consider
one of our dedicated knife skills classes and/or the fundamentals
classes as a warm-up to our kitchens, chef instructors, and teaching
practices.
Will I receive credit or any kind
of certificate upon completion of a class at OCI?
The consumer education program at OCI is not a part of our accredited
professional program. The classes, although run professionally
and taught by the same professional chef instructors who teach
in our professional program, are recreational in nature and are
intended solely for the education and enjoyment of the students.
Is OCI available for special events?
It depends upon the event. Please contact us at 503-961-6200
to inquire.
Where is OCI located?
We are located in the Goose Hollow neighborhood of SW
Portland, on Jefferson St. across I-405 from downtown. Please

to our offices and kitchens.
