2011 James Beard Foundation Awards were presented at a prestigious lunch prepared and served by OCI students.
Oregon Culinary Institute was proud to host the 2011 James Beard Foundation Awards Nominee Announcements – the first time ever in Portland or at a culinary school. Foundation President Susan Ungaro and members of her board were present, as were Portland’s nominated chefs and much of the local press corps. A delicious four-course lunch was prepared and served by Oregon Culinary Institute students and chefs, in honor of Portland’s own James Beard.
For the appetizer and dessert courses more than 30 students submitted James Beard-inspired recipes for a school competition. Chef Instructors selected the six most promising recipes in each category and in side-by-side kitchens competitors squared off. A panel of judges evaluated each creation and chose two from each category as winners, which were prepared by the winning students for the prestigious lunch.
