As part of our curriculum, students have the opportunity to work in our own, student-operated fine-dining restaurant. Under the direction of our chef instructors, each weekday our students serve lunch and dinner for up to 50 guests per seating. Students have a hand in menu creation and ingredient selection. They work on the line or create desserts. They put their beverage lessons into practice and experience working the front of the house.
And this is no soup and sandwich diner – three complicated courses at lunch, four fine courses at dinner, all highlighting the best of what the Pacific Northwest has to offer in each respective season. It makes for a unique and real-world learning experience, for both students and diners alike, and it’s found in Portland only at Oregon Culinary Institute.
